"To me, competitions like the World Chocolate Masters are important to infuse our metier with fresh ideas. But it’s also a great way for craftsmen to check if they can level up to other craftsmen. And in the end, participating is a good way to boost your career. A lot of great opportunities result from it."

 

"I think 3D printing will be a big thing during the next edition of the World Chocolate Masters. I believe it will present itself in pastries and desserts, but also in the candidates’ showpiece assignment. Flavour-wise, I think more acidic and spicy flavours will make their way to the fore. And I wouldn’t be surprised if techniques like aerating will become more prominent as well. I don’t believe restaurant pastry will be a big thing anymore during the next World Chocolate Masters."
